Graveyard Shift

We selected our Mexico Ki-Saya San Cristobal coffee for Graveyard Shift because it can hold up to the heat of a dark roast and still express some lively character. Coffee is the most important commercial crop in Chiapas and has a long history here with the people. Our supplier, Covoya, is a leading buyer in this region and is also a key partner for the farmers, working for more than 15 years with the coffee growing communities. This San Cristóbal Ki-Saya lot is sourced from organic coffee farmers. The coffee is grown under the shade of indigenous trees. Once it is picked, the coffee is depulped, fermented for 12-17 hours, washed and then dried on small drying patios.
