









The Story Behind the Coffee
Tolima Black Condor project is a coffee we began sourcing in 2023. The momentum is strong with very exciting things happening with this group of producers. Located in Tolima, an area historically impacted by conflict and renowned as the birthplace of Colombian coffee, this project supports over 100 conflict-affected farmers with a washing station, workshops, and payments above market rates.
Our importer Forest Green Coffee linked up with Emmanuel and his father Josue Enciso in 2019 to establish the Black Condor Project. Their aim has been to assist over 15 villages in Gaitania. Their property where they have the washing station is also a small dairy farm, and the cattle graze the beautiful pastures in the remote mountains. Workshops are routinely facilitated with producers to emphasize quality and cover processes such as fermentation, drying, and cupping of their own coffees.
This natural lot is initially fermented anaerobically in sealed tanks before being laid out to dry on the covered patios. This process lends to a more intensely fruited cup compared to a traditional natural. Not only is Josue a community leader, he is an innovator at heart and he’s designed quite an amazing fermentation and drying station for these coffees. We taste tropical punch, grape, and strawberry.
