The Story Behind the Coffee
This Sumatra coffee comes from the Aceh Province on the northern tip of the island of Sumatra. Coffee here is cultivated at elevations between 1,400 - 1,700 MASL. Sumatra coffee has an earthy and low acidity profile, distinct due in large part to both the terroir and processing. Due to rainy and humid conditions, coffee producers here are in a pinch when it comes to drying their coffee, and this is why they employ the wet-hulled process. It speeds up the drying while also skipping a fermentation step. Wet-hulling removes the fruit and the parchment layer while the coffee is still wet. With washed coffees they are fermented and then dried in the parchment, wet-hulled coffees instead are de-pulped and stripped clean of the parchment prior to drying. Drying the coffee this way exposes it to the natural environment, further adding earthy flavors.
