More about Rimiro from Burundi
The quality assurance behind this Rimiro lot begins as soon as farmers deliver their cherry. The cherries are all floated in small buckets to check the quality and remove underripe floaters. The cherry is then sorted by hand to remove all damaged, underripe, and overripe cherries.
Next in the processing, after the sorting, the cherries go right to the drying tables. Here the coffee dries slowly for 3 to 4 weeks. Pickers comb through the cherries daily to remove any missed defective beans. The drying tables are covered in tarps during the hottest part of the day, at night, and during rainfall.
