The Story Behind the Coffee
BRAZIL SITIO CALIARI ANAEROBIC NATURAL
Origin: Minas Gerais State
Elevation: 1,100 masl
Variety: Yellow Catuai, Red Catuai
Process: Anaerobic Natural
Our importer Royal New York has partnered with Legender Coffee to import this specialty green micro lot coffee from Brazil.
“Sitio Caliari is owned by Vanderson Caliari Alves and his wife Brigida, third-generation coffee growers. Mr. Alves inherited the first 10 hectares of land from his father and has slowly grown the farm by buying land from neighbors. Sitio Caliari, named after his Mom’s maiden name, is now over 90 hectares of land. In addition to producing their own coffee, Sitio Caliari has become a resource in the community. They provide services like drying, processing and temporary storage of lots to their neighbors.”
“Mr. Alves also experiments with different processing methods. About 20% of the farm’s production, including this lot, is processed using Anaerobic fermentation. In this fermentation process, the batch is fermented for 8 days in drums, 4 days in the yard and then finished in the dryers.”

Onyx coffee – based out of Bellingham, WA – is a Guatemala specialty coffee importing business founded and owned by third generation coffee farmer, Edwin Martinez. He is fully ingrained in the coffee supply chain, owning his own farm, connecting with farmers throughout Guatemala, and bringing these coffees to roasters in the US and abroad. Hear what Onyx has to say about the Fenix lot:
“In the generations our family has cultivated coffee in Guatemala, an onslaught of challenges have affected smallholder producers, from a 30 year civil war to devastating natural disasters. Guatemalan farming families are acutely attuned to generations of adversity.
Fénix blend is our statement of hopeful solidarity. When working families in Guatemala gain market access and knowledge, we rise together. This mythological blend is sourced by our Guatemala City based QC team, in cooperation with vendor partners in Nuevo Oriente and beyond. Sourcing from smallholder producers, cooperatives, and estates we've curated a blend that is chocolate-forward, with a classic Guatemalan profile of orange & lemon, cream, and caramelized brown sugar sweetness.”
