The Story Behind the Coffee
Starting in 2012, Beneficio San Vicente, with Benjamin Paz at the helm, discovered the talent and quality of the Cabañas region, and thus Project Cabañas was born. Beginning with only three producers, Project Cabañas started with a de-pulping machine and three drying beds installed on a rented plot of land. The group is now comprised of over 40 farmers and they have a proper wet mill and drying station. Their farms are on average 2.5 Ha at 1,650 meters above sea level. This small group of producers is putting out amazing coffee, the quality is undeniable. Together they are building a better future as their coffee has found the specialty market.
The natural lot starts with the farmer’s cherries submerged in water to remove floaters, then placed on African beds to dry for 20-25 days. The naturals undergo constant movement to ensure a uniform drying process, allowing for that sweet Honduran profile to shine!

Beneficio San Vicente began in the 1950s by Mr. Cantalicio Paz, traveling between coffee communities buying cherries with the ultimate goal of improving the livelihood and living conditions of those communities. They quickly grew to become one of the major coffee buyers in the region. Fast forward to today, where Benjamin Paz follows his father’s philosophy of excellence and hard work, driving growth and innovation, and connecting farmers with long-term buyers. San Vicente has seen the evolution of the coffee production chain in Honduras and has also been a major player in it as well.
The producers in Project Cabañas grow their coffees high above sea level and within a shade grown system of varying shrubs and tree species depending on the farm. This traditional method of growing not only creates delicious coffee due to the slower ripening process, but creates a variety of ecological benefits. Shade grown systems create natural habitat for biodiversity including migratory birds and butterflies, and can mitigate pest pressure. The trees protect the ecosystem and naturally provide nutrients to the coffee plants, and help protect local waterways by trapping runoff water which also protects from erosion.
